One of the most Instagrammed food trends of this year, the beautifully hued rainbow lattes were a (much needed) break from the steamed-milk-and-espresso combinations that we were used to.

Contrary to what the name says, the unicorn latte does not contain any coffee. So, if you’re looking for something different than the usual steamed milk and espresso, it’s a great option.

Rainbow unicorn lattes are a delicious way to step out of your comfort zone and enjoy a bright, beachy, colourful vibe. They can be a therapeutic routine even. After all, there is something blissful about the aesthetic process that goes into making them - the brewing of a warm cup of coffee, then topping it with a variety of spices and pink salt, then slowly pouring the frothy, creamy milk, and then basking in the nuances of flavour can be very soothing. It’s like they make you sit back, relax and steal a few moments of reflection.

Sometimes fondly referred to as "superfood" lattes, these colourful ombré drinks do pack a healthy punch, with ingredients like beetroot, spirulina, turmeric, blue algae, ginger, and pepper. The lattes are wholesome and flavourful with proteins, minerals and antioxidants.

The usual ingredients that go into rainbow unicorn lattes include: coconut milk, honey, turmeric, lemon, ginger, coconut milk and blue-green algae. These are healthy, healing ingredients, which you can get the most out of by adding just a little bit of Matcha.

So, here’s a recipe for you:

You can create this easily, adding any toppings and sweeteners of your choice, and enjoy this healthy beverage any time of the day. It’s high in vitamin B-12, minerals, protein, enzymes amino acid. It can also double up as a healthy, low-calorie dessert. If you like frothy milk beverages, you can use a milk frother. Otherwise, simply make it a bit bubbly with a whisk.

Ingredients

Almond milk - 400 ml.

Matcha - 1 teaspoon

Directions

Make Matcha paste by adding a splash of the almond milk to the Matcha powder and mixing it well.

Now, add 200ml almond milk into a pan and heat it gently. When it’s hot, add in the Matcha paste, your choice of sweetener and some plant-based food colouring for that surreal, colourful look. Froth with an electronic frother or a bamboo whisk and add your choice of toppings.
